Hand forged iron clad aogami 2 bunka made in Tosa region of Shikoku island in Japan.
These rustic style blades have a right hand bias to their grind (more convexity to the right side of the blade at the edge). They are all a little imperfect, quickly done grinds and possible bends. They are great for those wanting to practice heavy re-shaping sharpening and straightening. The steel is great and the heat treatments seem fine. We found a big batch of these on our last Japan trip in November 2019. They were from a smith who was retiring in Tosa and we got grip of them and are passing the savings along to you.
This knife is made from carbon steel. It will develop a patina with use, especially with acidic foods. Special attention is needed to keep from rusting. Do not leave wet. Hand wash & dry, no dishwasher. Hardwood-end grain or softwood long grain cutting boards are preferred; avoid bamboo and plastic cutting boards.
