Tadafusa aogami #2 nashiji knives are forged with a softer stainless cladding and a hard carbon steel center. They are forged with wide, kiriba primary bevels which allows for easy thinning down the road. Aogami #2, or blue #2, is a steel made by Hitachi that is formulated to retain long edge life.  Aogami #2 has the lowest carbon content and shortest edge life of the aogami steels.  Despite this, aogami #2 does have a longer cutting duration compared to most other steels.

Tadafusa hand forges knives in Sanjo City, Niigata. The make high quality, affordable hand forged knives with Japanese carbon and stainless steels, with western and japanese style handles.

Aogami #2 has a certain degree of rust resistance due to it’s chromium content.  However, it should be mentioned that extra care is required, as the core is not stainless and should be dried after use.  It will develop a dark patina with usage, but any orange rust should be removed with a light abrasive.
