Sakai Kikumori ‘Choyo’ 300mm saber tip Sakimaru Takobiki. Shirogami #2 steel with mirror polish. Octagon magnolia wood and water buffalo ferrule handle. Comes with Saya. 204 grams, 480mm approx. overall, 295mm cutting edge, 36mm height at heel.
Choyo series knives are specially made, fine-finished, professional quality knives from Sakai Kikumori. They are hand-forged by top level smiths and hand-finished on wet grinders in Sakai. These have a somewhat lighter blade with a mirror polish on the face and a rounded, polished spine and heel. These knives have very nice, smooth sharpen-ability and good edge life, not to mention excellent cutting feel. The Choyo series is highly recommended for a professional or sushi chef looking for high-performance, and easy sharpening.
Shirogami #2 is very responsive to sharpening stones, taking an extremely fine but biting edge easily. It is a highly reactive carbon steel. It should be mentioned that extra care is required, as the knife is not stainless and should be dried immediately after use. It will develop a dark patina with usage, but any orange rust should be removed with a light abrasive.

They work with a large variety of Sakai's best smiths, sharpeners and small factories to offer a wide variety of knives ranging from traditional materials and styles to more modern, western influenced styles and materials.
