Choyo series knives are specially made, fine-finished, professional quality knives from Sakai Kikumori. They are hand-forged by top level smiths and hand-finished on wet grinders in Sakai. These have a somewhat lighter blade with a mirror polish on the face and a rounded, polished spine and heel. These knives have very nice, smooth sharpen-ability and good edge life, not to mention excellent cutting feel. The Choyo series is highly recommended for a professional or sushi chef looking for high-performance, and easy sharpening.

Ginsanko is a fine grained, high carbon content (1% + carbon), low chromium (13%) stainless steel with the cutting and sharpening feel of a carbon steel, but less maintenance with regard to reactivity.  These knives are ideal for the professional who is looking for a traditional Japanese single bevel knife that’s easy to sharpen and also rust-resistant.
