Drop forged stainless steel heavy-duty shears that will handle hard shellfish shells, poultry, and fish bones.  One shear blade is micro-serrated for gripping, the other has a razor-polished edge for clean slicing. The blades are held together by an adjustable nut and quick-release joint; this is to maintain tight blade-to-blade contact but have the ease to take them apart for cleaning.
