VG-10 steel is famous for its durability and edge life. It is a stainless steel with high carbon content as well as added cobalt for wear resistance. Not the easiest steel to sharpen, but can make for a low maitenence work-horse. Jikko’s VG-10 gold series has good thin wide bevel grinds, a tsuchime (hammermark) finish on the damascus layered cladding, and a riveted pakka wood handle.
Jikko is a family business established in 1901 in Sakai City, Osaka and has cultivated extensive relationships with traditional craftsman in Sakai. From basic to top shelf, Jikko maintains a high standard of quality control. Wonderful in house sharpening is done on all of their single bevel knives, and special care is taken to provide a flat, fine-polished ura (side opposite omote bevel).
Stainless steel is durable and resistant to rust and patina, but maintain with care. Hand wash & dry, no dishwasher. Hardwood-end grain or softwood long grain cutting boards are preferred; avoid bamboo and plastic cutting boards.
