Jikko's Jyousaku series made with shirogami (white steel) #2 and a soft iron cladding, making for a very fine edge and smooth sharpen-ability thanks to excellent forging and heat-treating. Shirogami and iron are reactive, keep these dry when not in use to avoid rust. The knife will patina with normal use, and it is recommended to develop to patina of an iron clad knife. If orange rust develops, use a light abrasive to remove it.
Jikko is a family business established in 1901 in Sakai City, Osaka and has extensive relationships with traditional craftsman in Sakai. From basic to top shelf, Jikko knives are always sharpened by hand in the Jikko workshop, either by the head of the head of Jikko or under his supervision, maintaining very high quality control.
