Hinoki wood is a dense and fragrant Japanese soft wood in the cedar family with very strong anti-microbial properties. It is used in Japan traditionally as a surface for cutting and for hot tubs. Hinoki is very easy on edges, especially on hard high carbon Japanese steels that can be chipped easier on plastics and bamboo. Lightly wet the surface before use is foods with strong odors such as fish, meat, and onions to prevent the board from soaking up the smells.
We recommend using a Tawashi Brush with cold soapy water for cleaning hinoki cutting boards.
The thickness of this board is 7/8 inches rather than a full inch. It's got a great smell and it's the best for Japanese knives since they are gentler on the edges.
The only thing is that the edges of this board war quite sharp. I used sand paper to round the edges and now it's perfect!
