210mm Gyuto with red ebony 'D' shaped handle and buffalo horn ferrule. Blade is iron-clad Shirogami #2 with Tsuchime (hammermark) and Kurochi finish.
This blade is NOT stainless. Keep dry when not in use to avoid rust.
Yoshikane deserves their good reputation for excellent forging and heat treatments, which make for easy sharpening and good edge life, especially with the thin grinds provided on these knives. For a middle weight Japanese knife, they cut like a much thinner blade. Shirogami #2 is very responsive to sharpening stones and takes an extremely fine but biting edge very easily.
