Toshihiro Wakui hand-forges this series with shirogami #2 (white steel #2) in a cladding of stainless steel. Wonderful heat treatments and precise thin grinds make his knives very easy to sharpen with an awesome cutting feel. It should be mentioned that extra care is required, as the core is not stainless and should be dried immediately after use. It will develop a dark patina with usage, but any orange rust should be removed with a light abrasive.
Toshihiro Wakui forges knives in Sanjo, sharing a workshop with his father, a blacksmith that specializes in iron hardware. In the early 2000’s, Wakui-san started working triple shifts apprenticing with Yoshikane in the evening to learn the art of kitchen knives, and it is evident in his attention to heat treatment and grinding.
