New old stock unused vintage carbon steel western handled Sukehisa gyuto made in Tokyo. This western handled gyuto is the original gyuto design modeled after the European chef knives that were introduced to Japan in the 19th century during the late Edo / early Meiji periods.
This knife was found in a lot of knives made around the 1980's to 90's, it is unused and in excellent condition. The box might be faded and there might be a few small rust spiders on the blade or bolster. This maker is not making knives any more.
Tokyo used to be known for it's Kanto (Tokyo area) gyuto like this one, the very first western restaurant was located in the (now old) Tsukiji fish market location and production of western style knives began in Kanto area. Some old famous western knife brands were located in the Tokyo / Yokohama area. These old Kanto gyuto were always monosteel with a western style handle. This is the OG (or ojii-san) gyuto!
