Choyo series knives are specially made, fine-finished, professional quality knives from Sakai Kikumori. They are hand-forged by top level smiths and hand-finished on wet grinders in Sakai. These have a somewhat lighter blade with a mirror polish on the face and a rounded, polished spine and heel.
