Aogami #2 Nashiji series are hand forged in Sanjo City Niigata for Ohishi brand. They are 3 layered san mai blades with a carbon steel core, fitted with traditional Japanese style D shaped handles. The handles are made of red ebony and a composite wood ferrule for strength.
Ohishi aogami #2 nashiji knives are forged with a softer stainless cladding and a hard carbon steel center, hardened to 62-63 HRC. Since they're forged with a wide, kiriba primary bevel, they allow for easy thinning down the road. Aogami #2, or blue #2, is a steel made by Hitachi that is formulated to retain long edge life. Aogami #2 has the lowest carbon content and shortest edge life of the aogami steels. Despite this, aogami #2 does have a longer cutting duration compared to most other steels. These knives are a great inexpensive work-horse and are suitable for busy professionals or home cooks.
Aogami #2 has a certain degree of rust resistance due to it’s chromium content. However, it should be mentioned that extra care is required, as the core is not stainless and should be dried immediately after use. It will develop a dark patina with usage, but any orange rust should be removed with a light abrasive.
