A low maintenance work-horse series from Ohishi.  SLD steel ranges from 12-13% chromium content, right on the stainless / non-stainless boundary, and although it has good stain resistance, keep it dry like carbon steel. SLD will develop a grey patina with use and gets a toothy micro-serrated edge making it great for cutting skins on fruits vegetables (think peppers and tomatoes) as well as cutting raw and cooked proteins. It has excellent toughness at high hardness and can be ground very thin without becoming chippy, SLD is not particularly difficult to sharpen even tempered hard and the wide bevel grinds on this series makes for easy thinning!
