Ohishi 165mm nakiri knife. Stainless cladding with an Aogami #2 carbon steel core. Blade has kurouchi finish with tsuchime hammermarks. Red ebony ‘D’ shaped handle with pakka wood ferrule. HRC 62-63. 168 grams 162mm cutting edge, 50mm high at heel, 312mm overall length.
Hand forged in Sanjo City, Niigata for the Ohishi brand. With the long lived, toothy edge from the Aogami steel core, these knives are a great, lower maintenance, inexpensive work-horse, great for professionals and home cooks alike. Aogami #2 steel, made by Hitachi, has the lowest carbon content of the Aogami family, giving a little more toughness, but with a slightly shorter edge life than Aogami #1. Keep in mind though, still awesome edge life!! The stainless cladding has a black ‘kurouchi’ finish and hammermarks ‘tsuchime’ The aogami core is not stainless (for a non-stainless steel it does rust slowly), so keep dry when not in use to avoid rust.
