A medium hardness dense abrasive quantity clay matrix Japanese whetstone with smooth cutting and a fine scratch pattern. Somewhat slower than some other stones on high alloy content stainless steels but excellent cutting on Japanese single bevel. All Japanese abrasives are used in these stones, they work best if soaked for several hours despite other sellers claims. These are used regularly by our shops busy sharpening service.
Ohishi stones are made in Kyoto for Akifusa and are formulated to work on a wide variety of steels and knife types, harder and denser than the older style 'muddy' synthetic stones yet softer and more yielding than hard ceramic stones. Ohishi stones are made with 100% Japanese abrasives.
