Konosuke 270mm sujhiki Swedish stainless is an amazingly thin mono steel blade fitted with a Japanese octagonal ho wood handle with water buffalo horn ferrule. Blade is 270mm, 420mm overall, height at heel 38mm, 117 grams. Saya is included.
Konosuke's application of Swedish steel allows it to be sharpened with extreme ease to a beautiful edge, allowing for precise and smooth cutting feel. Sweden has some of the best iron deposits in the world, compromised of very low contaminants and fine grains. Many Swedish stainless alloys have been developed for making razor blades, which require the finest grain to get a good edge. This knife is hardened to 60 HRC, and would be ideal for a professional or home cook in need of a low maintenance, lightweight and thin double bevel slicer.
