Carbon steel 12" chef knife hand-forged in Thiers, France in the 1950's on a 19th-century water-powered mechanical hammer and ground by hand on the old style stone wheels.
New old-stock K Sabatier hand-made Nogent / cuisine massive style (the Thiers term for this style, Nogent was a rival knife-making city). These knives were hand-forged and hand-ground in Theirs France in the 1950‘s. Lighter and springier than their modern contemporaries, and with a harder temper, they hold their edge longer without being more difficult to sharpen. Original handles, not glued together from stray blades and handles. These knives have been cleaned up and stamped with an old K Sabatier mark but are otherwise as they were made in the 1950's. These knives were forgotten in storage until recently. They represent the old craftsmanship of Thiers. We are very happy to be able to offer these fine knives. If you are a fan of vintage French knives, these are a real find.
Being handmade, there are a few differences between knives. Some are lighter and some are a little heavier. It must be noted they have small imperfections that would be consistent with handmade knives of their day: slight waviness in edge or slightly out of flush bolster-ferrule. It should also be noted the wood is a bit dry from all the years in storage, and the root-based dye on the beechwood handles can come off on hands for the first several uses. If you can deal with these small issues you are rewarded with a knife that has a great cutting feel and is truly a piece of history!
Thiers, France at the Aine & Perrier Sabatier works. Aine & Perrier Sabatier (aka K Sabatier) has remained a family run business since its inception in the 1830's. The registered K trademark was recorded in 1834, making them arguably the oldest of the many Sabatier companies.
