The Akifusa SRS15 powder metal knives have awesome edge life, and and excellent grind which makes for smooth cutting. SRS15 is a powdered high alloy content stainless steel that remains tough, even when brought to high hardness such as this line's 64 HRC. It has good wear resistance due to the addition of tungsten and vanadium. SRS15 steel is powdered and sintered into form (rather than forging). This makes for a fine grain, allowing for a potentially difficult steel to be sharpened relatively easy. This is an excellent low maintenance knife for busy professionals who cannot sharpen every day, or for serious home cooks who want high performance. There are other cheaper SRS15 knives that perform well out there, but the Akifusa is one of the best, light and nimble but capable of heavy lifting in a professional environment.
